Keto Frittata

Cook 4 slices of bacon. Crumble coarsely and set aside.

Sautee 1-1 1/2 cups of sliced mushrooms and 1/5 brown onion (diced) in some of the bacon fat til tender

In a large microwave safe bowl, beat 3 large eggs

Add bacon, mushrooms and onions

Add a handful of grated extra sharp cheddar cheese (I used Santori MontAmore), a small handful of arugula, and julienne sundried tomatoes

Toss gently til mixed

Microwave 30 seconds at a time til cooked through (about 3 minutes)

Top with goat cheese crumbles, sour cream dollops and chives!
